I am Giving Up!

Sodas that is. I am giving up sodas. About 2 weeks ago I got back on the bandwagon.  I got up and walked every morning, did weights when I got home, recorded what I ate... and lost about 3 pounds!

Then.. I did something to my neck. Nothing that required the dr..but enough to make me stop in my tracks of anything I was doing. No extra walking this week, no weights.. and it is a holiday weekend so lots of not so great eating.

Next week begins my week 3 weeks of traveling. Which means being on the road and not always making the best choices...but I am preparing. Hence.. giving up the sodas!

How I plan to be successful:
-exchange soda for unsweetened tea
-pack my workout clothes and hit the hotel gyms to get my day started
-record what I eat (EVERYTHING)
-be prepared for the caffeine headaches that are going to go along with giving up the soda

Heres to a great July! My goal is to be down 15 pounds by the time school starts!

Pasta Salad

As many of you might know.. I married a Classicaly trained Executive Chef.. so therefore I haven't cooked much in the last 10 years.  This year as my #summerofcreating is underway I am stepping out of my comfort zone and trying some recipes.

This recipe is one that I have been doing for years and it is one of my faves! Not only is it good.. it is super easy to make!

Ingredients:
-Box of pasta- this time I am trying a gluten free pasta..but I usually use a bowtie pasta
-2 roma tomatoes
-1 green onion
-1 container of feta cheese crumbles (I like the tomato)
-basil as wanted
-1/4 cup of balsamic vinegar

Directions:
-cook pasta to al dente (I let it cook while I cut up the ingredients)
-combine in a bowl diced tomatoes, onions, feta cheese, basil. I also add a little bit of virgin olive oil and this time I added some pepperoni
-when pasta is finished add to bowl with mixture and mix
-add balsamic vinegar and mix

I am packing this for my lunch this next week. In the mornings I sometimes add a little more oil or a little more balsamic vinegar.

What is your go to recipe? Tonight I am trying a chicken recipe (I already made the pico de gallo to go with it)

Excited to have a successful week of me being a Champion for myself!

My Own Champion

Well... here I am again. I have talked about how I am going to change.. i have written how I am going to change.. and guess what...I haven't changed!

Each year I have a word. This year my word was Strength. I had to have a ton of strength to get through this crazy year.. and I think I did pretty well.  This upcoming year my word is Champion. You are probably wondering why I chose Champion?   This year I want to be a Champion for people. The world is a tough place and I want to make a huge effort to remind them why they are important. You can find my whole blog here about that.

I want to be a Champion for other people...but it is also time for me to be a Champion for myself.

I can't keep talking about change.. I need to make the change. This weekend I will be using my #summerofcreating to make healthy snacks and meals. I am going to be a Champion and hold myself accountable for who I want to be.  I can always help change the world..but I need to also work on being a Champion and changing myself physically! I will share the various recipes that I create and the progress I will make!
